Corona 12 campanas

¿De verdad son 12 para cada uno?__preguntó__, Siii, 12 uvas para cada uno__le dijo él, __¿y de dónde las sacamos?__dijo con rintintín, __¡mmm!__solo contestó él, y siguió caminando por la residencia de chicos hasta llegar a la cocina, sabía que allí debía de haber algo que aunque no fueran uvas les serviría igual. Casi todos los chicos se habían ido a celebrar las fiestas con su familia, en las residencias se quedaban chicos y chicas que no habían podido irse, por las circunstancias que fueran, y ese año se atrevieron a montar una pequeña fiesta en la residencia de los chicos, las chicas se habían colado y ellos les dieron la bienvenida, si no hubiera uvas para todos buscarían la manera de terminar bien el año y empezar el nuevo, esperaban que el conserje estuviera ya durmiendo y no hiciera la ronda habitual, no querían ser castigados.

La cámara de frío estaba abierta, les desconcertó pero aún así abrieron la puerta para ver si conseguían las uvas, dentro había toda clase de fruta pero no uvas, hacía mucho frío, y después de hacer un repaso rápido cogieron los arándanos, sin fijarse si había alguien más, __¿Y ahora qué hacemos?__dijo ella susurrando, __pues volver a la sala, ¿qué sino?__dijo él un poco cansado de ella. Un ruido los asustó he hizo que se acelerará la escena, corrieron el largo pasillo que llevaba a la sala notando detrás de ellos que el ruido se hacía cada vez más fuerte, acercándose rápidamente, ellos temían lo peor, a punto de llegar a la sala se detuvieron de golpe, ¿quién llevaba los arándanos?.

Es un postre super fácil de hacer, no le puse uvas y sí arándanos porque después había que tomarse las uvas y me pareció demasiado pero va a gusto del consumidor, a mi los arándanos me gustan más, le puse pétalos de rosa para el amor y polvo dorado comestible para el dinero, le di forma a las galletas de campana pero si se hace para otra ocasión se puede cambiar por la que más te guste, la campana va con un poco de chocolate blanco para las buenas vibras y con confeti por ser una celebración de fin de año, no tenía cotillón para poner dentro del círculo y que fuera más fin de año pero es una buena manera de decorar también, y si ya le ponemos más deseo también puedes ponerle unas monedas de chocolate o lo que te apetezca para atraer la buena suerte de fin de año y año nuevo, para llevar a la fiesta es un postre genial y muy rico, espero que te guste y que tengas un maravilloso 2024.

· CORONA 12 CAMPANAS ·

Sin gluten

Ingredientes
  • 2 masas de hojaldre (redondo) sin gluten
  • 1 tableta de chocolate blanco (para fundir)
  • 400 ml. nata para montar (muy fría)
  • 250 g. mascarpone
  • 1 sobre de gelatina en polvo
  • 100 ml. agua
  • 3 cdas. azúcar en polvo
Decoración:
Arándanos (o uvas)
Confeti de caramelo
Pétalos de rosa 
Polvo dorado comestible

Elaboración
Con dos cucharadas de agua, derretir la gelatina en polvo, con el restante de agua calentar sin llegar a hervir, puede ser en un cazo o en el microondas, añadir la gelatina y remover hasta que se diluya bien, dejar enfriar un poco. Mientras montar la nata, añadirle el azúcar en polvo y la gelatina a hilo, por ultimo añadir y mezclar el mascarpone. Poner dentro de mangas pasteleras y refrigerar.

Mientras hacemos las masas de hojaldre. Hacer 2 círculos grandes con las masas de hojaldre, usar los restos para hacer las campanas (con un cortapastas). Poner los círculos y las campanas entre dos bandejas de horno, con papel de hornear, así evitas que el hojaldre suba. A 180º C durante 45 minutos, aunque pasada la media hora vigilar que la masa esté cocinada y no se queme. Una vez cocinado sacar del horno y dejar enfriar.

Derretir el chocolate blanco y decorar las campanas, con el sobrante de chocolate pincelar los círculos de hojaldre. Dejar enfriar. 

Cuando la nata esté muy fría tendrá un consistencia más firme puedes empezar a rellenar sobre los aros de hojaldre, una base de hojaldre, relleno de nata, otra base de hojaldre y más relleno de nata. Sobre esta nata decorar con las campanas, el confeti, pétalos de rosa y polvo dorado. Dejar enfriar en el frigorífico hasta la hora de servir.

It is a super easy dessert to make, I did not put grapes and blueberries because then you had to take the grapes and it seemed too much but it is up to the consumer, I like blueberries more, I put rose petals for love and edible gold dust for money, I gave shape to the bell cookies but if it is done for another occasion you can change it for the one you like, the bell goes with a little white chocolate for good vibes and confetti for being a celebration of the end of the year, I had no cotillion to put inside the circle and that was more end of the year but it is a good way to decorate too, and if we put more desire you can also put some chocolate coins or whatever you like to attract good luck for the end of the year and new year, to take to the party is a great dessert and very rich, I hope you like it and have a wonderful 2024.

· CROWN 12 BELLS ·

Gluten free

Ingredients
  • 2 puff pastry doughs (round) gluten-free
  • 1 white chocolate bar (for melting)
  • 400 ml. whipping cream (very cold)
  • 250 g. mascarpone
  • 1 sachet of powdered gelatine
  • 100 ml. water
  • Powdered sugar
Decoration:
Blueberries (or grapes)
Caramel confetti
Rose petals 
Edible golden powder

Method
With two tablespoons of water, melt the powdered gelatin, with the remaining water heat without boiling, either in a saucepan or in the microwave, add the gelatin and stir until well diluted, let cool slightly. Meanwhile whip the cream, add the powdered sugar and the gelatine in a trickle, finally add and mix the mascarpone. Put into pastry bags and refrigerate.

In the meantime make the puff pastry dough. Make 2 large circles with the puff pastry, use the leftovers to make the bells (with a pastry cutter). Put the circles and the bells between two baking trays, with baking paper, to prevent the puff pastry from rising. Bake at 180º C for 45 minutes, but after half an hour, make sure the dough is cooked and does not burn. Once cooked, remove from the oven and let it cool.

Melt the white chocolate and decorate the bells, with the remaining chocolate brush the puff pastry circles. Allow to cool. 

When the cream is very cold, it will have a firmer consistency and you can start filling the puff pastry rings, a puff pastry base, cream filling, another puff pastry base and more cream filling. On top of this cream, decorate with bells, confetti, rose petals and gold dust. Let cool in the refrigerator until serving time.

Towel crepe rolls

En el tranquilo barrio de Kioto, donde los cerezos florecen con elegancia y los templos antiguos cuentan historias de épocas pasadas, vivía la familia Matsuda, una familia grande y bulliciosa que siempre buscaba nuevas aventuras. El patriarca, Takeshi, soñaba con llevar a su familia a un viaje inolvidable a Tokio, la vibrante capital de Japón.

El deseo de Takeshi se volvía más fuerte cada día, pero su familia no compartía la misma emoción. La abuela, Yuki, prefería la tranquilidad de su jardín, mientras que los adolescentes, Hiroshi y Akiko, estaban más interesados en sus propios asuntos. Sin embargo, la pequeña Mei, una niña curiosa de cinco años, se emocionaba con la idea de explorar nuevos lugares. Un día, durante una reunión familiar, Takeshi anunció que finalmente llevarían a cabo su tan esperado viaje a Tokio. La noticia creó un bullicio de emociones en la casa Matsuda, y cada miembro de la familia comenzó a prepararse para la aventura.

En la víspera del viaje, la abuela Yuki insistió en llevar a Mei a una pastelería del centro para comprar un postre especial llamado "towel crepe roll". · TOWEL CREPE ROLLS ·

Sin gluten

Ingredientes
  • Fresas
  • Nata montada
  • Azúcar o eritritol
  • Obleas de arroz
  • Cacao, fresas y menta (para decorar)
Elaboración
Mojar las obleas de arroz en agua, no dejar que se ablanden demasiado, colocar encima de la mesa tres obleas superpuestas una encima de la otra por un lado. Esparcir por encima la nata montada y trozos de fresa. Cerrar las obleas enrollándolas de un lado y enrollándolas por un lado hacía el otro. Espolvorear cacao en polvo por encima y decorar con fresa y menta.


In the quiet neighbourhood of Kyoto, where cherry blossoms bloom gracefully and ancient temples tell stories of bygone eras, lived the Matsuda family, a large and boisterous family always looking for new adventures. The patriarch, Takeshi, dreamed of taking his family on an unforgettable trip to Tokyo, Japan's vibrant capital.

Takeshi's desire grew stronger every day, but his family did not share the same excitement. The grandmother, Yuki, preferred the tranquillity of her garden, while the teenagers, Hiroshi and Akiko, were more interested in their own affairs. However, little Mei, a curious five-year-old, was excited by the idea of exploring new places. One day, during a family gathering, Takeshi announced that they would finally take their long-awaited trip to Tokyo. The news created a buzz of excitement in the Matsuda household, and each member of the family began to prepare for the adventure.

On the eve of the trip, Grandma Yuki insisted on taking Mei to a downtown bakery to buy a special dessert called a "towel crepe roll". This delicious Japanese delicacy unfolded like a thin towel, revealing layers of cream and fruit. Mei was fascinated and promised to savour every bite with gratitude. The morning of the journey arrived, and the Matsuda family, dressed in traditional kimonos, embarked on the journey to Tokyo. However, family harmony was thrown off balance when Mei, excited by the prospect of new adventures, got lost in the airport crowd.

Panic gripped the family, but soon the brave Mei was found by a kindly old man sitting under an ancient tree in the airport courtyard. The old man, a wise connoisseur of Japanese traditions, calmed worried hearts and guided the family to the boarding gate. In Tokyo, the Matsuda family explored the bustling markets and quiet gardens, as well as the temples filled with tourists like themselves.

Meanwhile, Akiko crossed paths with a handsome Japanese man named Hiroto. Although she was instantly attracted to him, Hiroto did not share the same feelings and did not like seeing Akiko glued to him. Despite the disappointment, Akiko moved on, she was always positive. Back home, the Matsuda family cherished their togetherness and shared memories more than ever.


· TOWEL CREPE ROLLS ·
Gluten free

Ingredients
  • Strawberries
  • Whipped cream
  • Sugar or erythritol
  • Rice wafers
  • Cocoa, strawberries and mint (to decorate)
Method
Soak the rice wafers in water, do not let them get too soft, place three wafers on the table, one on top of the other on one side. Spread the whipped cream and strawberry pieces on top. Close the wafers by rolling them up on one side and rolling them on the other side. Sprinkle cocoa powder on top and decorate with strawberry and mint.

Carpaccio de higos

Subida encima de una escalera estaba Maya limpiando los libros y estantes de la librería de la biblioteca de la casa, tarareando para ella una canción que había escuchado por la radio mientras se preparaba el desayuno. Una de las cosas que había hecho que se decidiera por comprar esa casa fue la biblioteca, su sueño de pequeña era un día tener una, y lo había cumplido.

Mientras limpiaba el polvo desde las alturas podía ver a través del ventanal de la estancia la higuera grande que había en el jardín, aún no tenía fruto pero esperaba poder verlos crecer y probarlos cuando llegara el momento. Se imaginaba sentada en la mesa, con un libro entre manos mientras degustaba un higo, con queso, con jamón, o como le diera la gana, estaba tan feliz que sonrió a pesar de saber que aún le quedaba mucho trabajo para poner la casa en orden y al hacerlo descubrió un libro hueco, uno de esos libros que en su interior alberga algo, algo que alguien quería que estuviera escondido a vista de todos, ahora podría descubrirlo ella.

Bajó rápida de la escalera con el libro en la mano y lo abrió encima de la mesa, ¿dentro?, un mapa, ¿del tesoro?, pues lo parecía, aunque el dibujo no era muy profesional, como si un niño hubiera estado dibujando cuatro rayas y una cruz, pocas palabras y muchas manchas, ¿era una broma?. Las rayas señalaban la higuera, la x estaba justo a los pies de ella. Su pregunta era ¿quería saber qué significaba el mapa?¿quería de verdad?, jajaja, naaaa, era aventurera pero si allí había un tesoro, allí se quedaría, formaría parte de la historia de la casa y se la contaría a mis amigos para tentarlos, ¿crees que lo conseguiría?.

· CARPACCIO DE HIGOS ·

Ingredientes
  • 4 higos (o brevas)
  • Queso de cabra (a trocitos)
  • Jamón (serrano o ibérico)
  • Semillas de calabaza y girasol
  • Aceite de oliva virgen extra
Elaboración
Pelar los higos, ponerlos entre dos hojas de film transparente y con un aplanador, aplanarlos hasta dejar una masa de higos fina. Guardar en el congelador mínimo 1 hora. Para prepararlo para servir dejar atemperar unos 5 minutos sin papel film, encima del plato. Esparcir por encima unos trocitos de queso de cabra, un poco de jamón y unas semillas de calabaza y girasol. Rociar con un poco de aceite de oliva virgen extra y servir.

She imagined herself sitting at the table, with a book in her hands while she tasted a fig, with cheese, with ham, or however she pleased, she was so happy that she smiled even though she knew that she still had a lot of work to do to put the house in order, and when she did so she discovered a hollow book, one of those books that inside it contained something, something that someone wanted to be hidden from everyone's view, now she could discover it for herself.

She came down the stairs quickly with the book in her hand and opened it on the table, inside, a map, of the treasure?, it looked like it, although the drawing was not very professional, as if a child had been drawing four lines and a cross, few words and many spots, was it a joke?. The stripes pointed to the fig tree, the x was right at the foot of it. Her question was, did I want to know what the map meant?, did I really want to know?, hahaha, nop!, I was adventurous but if there was a treasure there, it would stay there, it would be part of the history of the house and I would tell it to my friends to tempt them, do you think I would get it?.




· FRESH FIGS CARPACCIO · 
Ingredients
  • 4 figs 
  • Goat's cheese (diced)
  • Ham (Serrano or Iberian)
  • Pumpkin and sunflower seeds
  • Extra virgin olive oil
Method
Peel the figs, put them between two sheets of cling film and flatten them with a flattening tool until you have a fine fig dough. Keep in the freezer for at least 1 hour. To prepare for serving, leave to cool for about 5 minutes without cling film on the plate. Sprinkle a few pieces of goat's cheese, a little ham and some pumpkin and sunflower seeds on top. Drizzle with a little extra virgin olive oil and serve.

Granola casera

Sentada en un banco del parque, admirando el cielo tan azul que ese día nos invitaba a estar fuera de casa, de la oficina o que cualquier parte que nos encerrase sin poder apreciarlo, sintiendo el sol en el cuerpo y oír a la gente disfrutarlo como yo. 

En el banco de al lado estaban sentados un grupo de chicos jóvenes, hablando de la belleza de sus chicas, la alegría de la música moderna o de los siguientes pasos que darían para pasar un verano divertido. ¡mmmm! Planes, planes, planes...

Más abajo, sobre el césped recién cortado, estaban sentados unos ciclistas, sudorosos y felices, comiendo granola para adquirir nuevas energías y seguir pedaleando.

En la mesa de picnic, la familia, una grande, con niños y abuelos, preparándose para disfrutar de la buena comida y un día de juegos y diversión. Debía ser emocionante para todos ya que no paraban quietos ni un momento y gesticulaban o aplaudían cuando alguno hablaba. ¡seeee! energía, energía, energía...

Junto al río estaba el otro grupo, esta vez de chicas, jóvenes, guapas y llenas de ilusión, aunque estaban alejadas de mi se les notaba la energía, escuchaban y se balanceaban al son de una música, algunas de ellas cantando la canción, no llegue a oírla, aunque imaginé que podía ser algún grupo del K-pop por la vestimenta de ellas.

Imaginar o inventar los diálogos de todos ellos es algo que me gusta hacer, __¡cariño! ¿ya le has dicho a tus padres que el año que viene seremos uno más?___ o ___¿has escuchado lo último de Blackpink?__ o___¿vas a invitar a la chica nueva al baile de fin de curso?... Esa energía que desprendemos la gente cuando estamos reunida, en consonancia con ese cielo tan azul, es algo que nos hace únicos, ¿no crees?.

La granola es un delicioso alimento que se ha vuelto muy popular en los últimos años. Se trata de una mezcla de ingredientes naturales, como avena, frutos secos, semillas y miel, que se hornea para obtener una textura crujiente y un sabor delicioso.

El origen de la granola se remonta al siglo XIX, cuando el médico suizo Maximilian Bircher-Benner desarrolló una receta a base de avena cruda, frutas y nueces para alimentar a sus pacientes. Esta mezcla se convirtió en un alimento energético y nutritivo, y con el tiempo evolucionó hasta convertirse en la granola que conocemos hoy en día.

Se ha vuelto muy popular debido a sus numerosos beneficios para la salud. La avena es una excelente fuente de fibra y ayuda a mantener el sistema digestivo saludable, mientras que los frutos secos y las semillas proporcionan grasas saludables, proteínas y una gran variedad de nutrientes. Además, la miel utilizada en la granola le brinda un dulzor natural y también aporta beneficios antioxidantes.

Puede ser consumida sola como un snack saludable, pero también se utiliza como ingrediente en numerosas recetas. Se puede añadir a yogures, batidos, ensaladas de frutas o espolvorear sobre postres para darles un toque crujiente y nutritivo.

Y esta es mi versión, queda decir que si quieres puedes añadirle chocolate negro aunque yo lo añadiría después de la cocción para que no se derrita o también puedes añadir a la mezcla frutas deshidratadas si te gustan, personalizable según tus gustos.



· GRANOLA ·

Ingredientes
  • 150 g. copos de avena sin gluten
  • 75 g. semillas de calabaza
  • 40 g. semillas de girasol 
  • 35 g. semillas de sésamo
  • 40 g. almendras laminadas
  • 40 g. avellanas troceadas
  • 50 g. coco rallado
  • 1 cucharada de sal y pimienta
  • 1 cucharada de canela molida
  • 1 cucharadita de cúrcuma
  • 75 g. aceite de coco derretido
  • 120 g. miel 
  • 1 cucharadita de vainilla líquida
Elaboración

Mezclar bien y extender todos los ingredientes sobre una bandeja de horno. Y hornear a 170 ºC durante 30 minutos o hasta que esté dorado.

Dejar enfriar y romper en trozos. Guardar en un recipiente hermético.

On the bench next to us sat a group of young guys, talking about the beauty of their girls, the joy of modern music or the next steps they would take to have a fun summer. mmmmm! Plans, plans, plans...

Further down, on the freshly mowed grass, sat sweaty and happy cyclists, eating a granola to re-energise themselves and keep on pedalling.

At the picnic table, the family, a large one, with children and grandparents, preparing to enjoy good food and a day of fun and games. It must have been exciting for everyone as they didn't stop for a moment and were gesticulating or clapping when someone spoke. yeah! energy, energy, energy...

Next to the river was the other group, this time of girls, young, beautiful and full of illusion, although they were far away from me you could feel their energy, they were listening and swaying to the sound of music, some of them singing the song, I didn't get to hear it, so I imagined that it could be a K-pop group because of their clothes.

Imagining or inventing the dialogues of all of them is something I like to do, ___Honey! have you told your parents that next year we will be one more?___ or ___have you listened to the latest Blackpink?__ or___are you going to ask the new girl to the prom? That energy that we people give off when we are together, in harmony with that blue sky, is something that makes us unique, don't you think?

The origin of granola dates back to the 19th century, when Swiss physician Maximilian Bircher-Benner developed a recipe based on raw oats, fruits and nuts to feed his patients. This mixture became an energising and nutritious food, and over time evolved into the granola we know today.

It has become very popular due to its numerous health benefits. Oats are an excellent source of fibre and help support a healthy digestive system, while nuts and seeds provide healthy fats, protein and a variety of nutrients. In addition, the honey used in the granola gives it a natural sweetness and also provides antioxidant benefits.

It can be eaten on its own as a healthy snack, but is also used as an ingredient in numerous recipes. It can be added to yoghurts, smoothies, fruit salads or sprinkled on desserts to give them a crunchy and nutritious touch.

Ingredients
  • 150 g. gluten-free oat flakes
  • 75 g. pumpkin seeds
  • 40 g. sunflower seeds 
  • 35 g. sesame seeds
  • 40 g. sliced almonds
  • 40 g. chopped hazelnuts
  • 50 g. grated coconut
  • 1 tbsp. salt and pepper
  • 1 tbsp. ground cinnamon
  • 1 teaspoon turmeric
  • 75 g. melted coconut oil
  • 120 g. honey or 80 g. date paste
  • 1 teaspoon liquid vanilla
Method

Mix well and spread all the ingredients on a baking tray. Bake at 170 ºC for 30 minutes or until golden brown.

Leave to cool and break into pieces. Store in an airtight container.

Pizza vietnamita

El sexto Rey Hung que, acercándose a los años crepusculares de su vida, convocó a cada uno de sus hijos para hacer una ofrenda de la que el mejor se convertiría en su sucesor.

Buscando impresionar a su padre, los hijos recurrieron a delicias exóticas y extranjeras. Lang Lieu, un personaje más sencillo y menos pretencioso, recurrió a dos ingredientes locales: banh chiay (harina de arroz) y banh chung (frijol mungo y cerdo). Banh chiay representa el cielo y banh chung representa la tierra, las plantas y los animales. Impresionado con el simbolismo y la sencillez de los ingredientes y el ingenio de Lang Lieu, el Rey lo eligió como su sucesor.

The whole thing is then drizzled with chili sauce and mayo before being folded, there are as many versions as there are vendors.

I think it's an ideal breakfast, because it's salty (and they say it's better to have a salty breakfast than a sweet one, because of the glucose spikes), you can use leftover ingredients from other dishes, and it's super easy to cook, so you can start the day with energy.


· BÁNH TRANG NU'Ó'NG ·

Sin gluten

Ingredientes para 4 
  • 4 obleas de arroz
  • 4 huevos (batidos)
  • Tiras de pollo asado o cerdo
  • 4 cucharadas de maíz
  • Tiras de zanahoria
  • 4 cucharadas de cebollino cortado
  • Salsa chili
  • Mayonesa
  • AOVE
Elaboración
Pincelar un poco de AOVE  en una sartén, poner una oblea de arroz dentro. Echar el huevo batido y esparcir con una cuchara dentro de la oblea,  cuando empiece a cuajar ir añadiendo los demás ingredientes, por último echar un chorrito de salsa chili y otro de mayonesa. Doblar la oblea y servir.

NOTA:

Mi versión de las fotos lleva rúcula, kimchi y trocitos de jamón, además de la oblea, el huevo,  el maíz y las salsas.



· BÁNH TRANG NU'Ó'NG ·
Gluten free

Ingredients for 4 
  • 4 rice wafers
  • 4 eggs (beaten)
  • Roast chicken strips or pork
  • 4 tablespoons sweet corn
  • Carrot strips
  • 4 tablespoons chopped chives
  • Chili sauce
  • Mayonnaise
  • EVOO
Method
Brush a little EVOO in a frying pan, place a rice wafer inside. Add the beaten egg and spread with a spoon inside the wafer. When it starts to set, add the other ingredients and finally add a dash of chilli sauce and a dash of mayonnaise. Fold the wafer and serve.

NOTE:

My version in the photos has rocket, kimchi and bits of ham, as well as the wafer, the egg, the corn and the sauces.

[Mi historia de cómo he ido cambiando mi alimentación]

El año 2020, año de confinamiento, fue en mi caso, año de descubrimientos personales a nivel salud sobretodo. Soy un persona que padece migrañas ocasionalmente y dolores de cabeza diariamente, sobre todo ese año y de verdad que padecer ese dolor todo el tiempo me llegó a desesperar. Un día de esos, descubrí la dieta keto, para muchísimas personas conocida, debía eliminar hidratos y azúcar entre otras cosas, no la voy a explicar por que no es el caso, bueno, la cosa es que durante el tiempo que realicé esta dieta (1 mes) dejé de tener dolor de cabeza y me sentía deshinchada, así que quise ir más allá y contacté con un psiconeuroinmunólogo para averiguar que me sucedía pues la medicina tradicional, hasta ahora, no me dío una solución. Efectivamente, soy sensible al gluten, además de otras patologías que siguiendo una correcta alimentación podía corregir e incluso eliminar. 

Y así, señoras y señores, fue como decidí que en este año 2021 cambiaría mis hábitos alimentarios y aunque me cueste, investigar sobre cómo ir cambiando las recetas clásicas para facilitarme la vida. Les puedo asegurar que la compra ha llegado a ser un suplicio pues no siempre lo que se vende es entendible para mi, entonces ante la duda no lo compro, pero sobre todo el poder adaptar las harinas, los azúcares, cambiar los lácteos de vaca a vegetales y que el resultado fuera lo más parecido a la comida que siempre he comido.

Decir que comer sin gluten no es carísimo pero no es barato además también me lleva a rechazar alimentos que nunca pensé diría que no, como la pasta o el pan, ya que los comerciales tienen un sabor y textura diferentes a los hechos con harina de trigo. Los mix de harinas comerciales sin gluten, tienen entre sus ingredientes, azúcar, cosa que estoy eliminando de mi alimentación, por lo que me obliga a hacer mi propio mix, y todavía no me he atrevido con panes complicados o pastas caseras pero sí en saber quitarme el "antojo" de dulce cuando lo tengo. Que es a lo que me trae hacer esta entrada y a contestar a las preguntas que algunos me hacen en IG sobre el cambio a sin gluten, no soy alérgica ni celíaca pero sí sensible.

Por otro lado, odio los pasteles en taza o como más se conocen, mug cakes, me parecen de textura gomosa y la harina de trigo en elaboraciones terminadas en el microondas no me gusta nada. Pero, creo que lo pondré en mayúsculas, PERO, encontré mi fórmula para quitarme el antojo de dulce, con una buena textura y además delicioso, en tan solo 60 segundos, sin azúcar, sin lácteos, sin huevo, vegano y sin gluten, espero que te guste el show.

· BROWNIE EN TAZA ·
Sin gluten

Ingredientes:
  • 2 cucharadas soperas de aceite de oliva
  • 4 cucharadas soperas de agua
  • 1 cucharada sopera y media de eritritol
  • 2 cucharadas soperas de cacao en polvo
  • 2 cucharadas soperas de fécula de maíz 
  • 2 cucharadas soperas de harina de arroz
  • 1 pizca de sal
  • 1 cucharadita de las de café de esencia de vainilla
  • 1 cucharada de chips de chocolate o nueces picadas o nibs de chocolate
Elaboración
Poner todos los ingredientes en una taza, sigue el orden de la lista. Remover muy bien la mezcla con un tenedor y llevar 60 segundos al microondas. Mi microondas es de 800 W.

NOTAS:

  • Usa una taza baja y ancha pues al no llevar levadura el bizcocho no crece, aunque si no tienes puedes usar cualquier otra. 
  • Asegúrate de remover bien la mezcla y que no quede nada de harina sin integrar. 
  • No lo cocines demasiado o se secará mucho. 
  • ¡Ah! déjalo enfriar o te quemarás. 
  • Y por último, decóralo como más te guste, helado, nueces, dulce de leche, nata, etc.

[My story of how I changed my diet]

The year 2020, the year of confinement, was in my case above all a year of personal discoveries in relation to health. I can assure you that shopping has become an ordeal, because what's sold isn't always understandable to me, so when in doubt I don't buy it, but above all to replace the flours, the sugar, the cow's milk products with vegetables and so that the result is so similar to the food I've always eaten.

Eating gluten-free isn't expensive, but it's not cheap either, and it leads me to reject foods I never thought I'd, like pasta or bread, because the commercial products have a different taste and texture than those made from wheat flour. The commercial gluten-free flour mixes contain sugar, among other things, something I cut out of my diet. This forces me to make my own mix, and I haven't ventured into complicated breads or homemade pasta yet, but I know how to get rid of the "craving" for sweets when I've it. That leads me to write this post and answer the questions some people ask me on IG about going gluten-free: I'm not allergic or celiac, but I'm sensitive.

On the other hand, I hate cup cakes or, as they're better known, mug cakes, they seem to me to have a rubbery texture and I don't like wheat flour in microwave baked goods at all. But, I think I'll capitalise, BUT, I've found my recipe to get rid of my sweet cravings, with a good texture and delicious too, in just 60 seconds, sugar free, dairy free, egg free, vegan and gluten free, I hope you like the show.



· BROWNIE IN A CUP ·
Gluten free

Ingredients
  • 2 tablespoons olive oil
  • 4 tablespoons water
  • 1 tablespoon and a half erythritol
  • 2 tablespoons cocoa powder
  • 2 tablespoons cornflour 
  • 2 tablespoons rice flour
  • 1 pinch salt
  • 1 teaspoon vanilla essence
  • 1 tablespoon chocolate crisps 
Method
Put all the ingredients in a bowl, in the order listed. Stir the mixture very well with a fork and put it in the microwave for 60 seconds. My microwave has 800 W.

TIPS:

  • Use a low, wide cup, as the cake won't rise because it doesn't contain yeast. If you don't have one, you can use any other cup.
  • Make sure you stir the mixture well and that there's no flour leftover that's not been incorporated. 
  • Don't cook it too long or it'll dry out too much. 
  • Oh, let it cool down or you'll burn yourself.

Cotton candy tea

María Antonia Josefa Juana Huerta del Rey es, además de una adolescente, una chica del montón, pero no del montón de lo normal sino del montón de la parte de arriba pues vive en el ático del edificio de la plaza Viuda Capeto. Guapa y con la lengua afilada hace que todo el bloque de pisos hable mal de ella, bueno, lo hace pues ella tampoco se calla con los vecinos, y eso a sus padres les lleva de cabeza, una noche casi casi de cabeza al calabozo, pues ella juraba y perjuraba que el vulgo le había robado mientras subía la escalera hacía casa y los del edificio casi la decapitan.

¡En fin! la historia, que no es otra que una niña malcriada y llena de orgullo y satisfacción no hace más que empeorar a favor de la susodicha, que si es una excéntrica, que si come a todas horas dulces, pasteles y toma té con mucho azúcar, que si lleva joyas que no se puede costear, ¿a ver a quién se las ha robado?, se preguntan todos, que si esto y que si aquello...creo que esta historia va a acabar muy mal pero mientras tanto disfrutemos de la receta de su té.

Conocido como té de algodón de azúcar, el té de María Antonieta no es más que té caliente vertido sobre algodón de azúcar colocado en una taza de té. Ingredientes
  • Té (preferiblemente un té con sabor fuerte pues el azúcar lo endulza mucho)

Elaboración
Colocar el algodón de azúcar en la taza de una manera "alocada" como los peinados de María Antonieta.

Verter el té caliente sobre el algodón de azúcar.

Parece ser que la receta se originó en la primera mitad del siglo XX en la casa de Helen Fredell de St. Paul, Minnesota. En el “Cooky Carnival” de Betty Crocker (que presenta Molasses Crinkles), la Sra. Crocker escribe: “Cuando se sirvieron en Mrs. Fred Fredell's en St. Paul, Minnesota, estaban tan deliciosas que le supliqué la receta. ·CHOCOLATE CRINKLES ·

Ingredientes
  • 60 gramos mantequilla sin sal
  • 230 gramos chocolate semidulce o amargo, picado 
  • 85 gramos azúcar
  • 2 huevos grandes
  • 2 cucharaditas azúcar de vainilla
  • 195 gramos harina
  • 1/4 cucharadita de sal
  • 1/2 cucharadita de levadura en polvo
  • 110 gramos azúcar glass tamizado 

Elaboración
Fundir al baño María el chocolate con la mantequilla. Reservar. En la batidora, batir los huevos y el azúcar hasta que espese, se vuelva una crema blanca y esponjosa de 3 a 5 minutos. Añadir la vainilla, seguidamente el chocolate. Seguir batiendo hasta que se mezcle bien. 

En un cuenco aparte mezclar la harina, la sal y la levadura en polvo. Agregar los ingredientes secos con el chocolate y batir hasta que se mezcle todo bien. Tapar con film y refrigerar hasta que esté firme, desde unas horas hasta toda la noche. 

Precalentar el horno a 165 ºC en la bandeja del horno poner un papel de hornear. Colocar el azúcar glass tamizada en un cuenco profundo. Formar una bola de unos 2.5 cm. y hacer rodar e impregnarse bien dentro del azúcar glass. Tiene que quedar muy pero que muy recubierto. Colocar en la bandeja dejando separación entre ellas. Unos 5 cm. 

Hornear unos 10 minutos, y dejar reposar 5 sobre una rejilla.

Ingredients
  • 60g unsalted butter
  • 230g semi-sweet or dark chocolate, chopped
  • 85g sugar
  • 2 large eggs
  • 2 teaspoons vanilla sugar
  • 195g flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 110g sifted icing sugar

Method
Melt the chocolate with the butter in a water bath. Keep. Beat the eggs and sugar in a food processor for 3 to 5 minutes until a fluffy white cream. Add the vanilla and then the chocolate. Continue beating until everything is well mixed.

In a separate bowl, mix the flour, salt and baking powder. Add the dry ingredients with the chocolate and beat until everything is well mixed. Cover the dough with foil and put it in the fridge until it's firm.

Congee de pollo

Cuando llegaba el frío invierno se metía en capas de ropa, como una cebolla__decía ella, y eso le encantaba, le gustaba sentir el frío aun metida entre esas capas, decía que eso la hacía sentirse viva, con vigor para seguir adelante y notar cada parte de su cuerpo. 

Una vez, cuando su novio rompió con ella y la dejó desolada, sus amigas decidieron viajar a una isla con mucho calor, para divertirse, bailar y beber, beber hasta olvidar. Pero ella no soportaba el calor, tanto calor, decía que la asfixiaba y que hacía que el dolor se quedara dentro, sin poder salir, sin poder quitárselo de encima, el calor la aletargaba, dejaba su interior en pausa y que cuando volviera a la normalidad aún lo llevaría dentro.

El congee son gachas de arroz tradicional muy consumido en Asia. Se obtiene cocinando el arroz durante mucho tiempo en caldo o agua, siendo el grano redondo quizás el más utilizado aunque dependiendo el país también se usa grano largo. Generalmente se sirve solo pero también se le añade pollo, pescado o verduras en la versión salada, pues también existe la versión dulce. Este plato está hecho a menudo para personas mayores o niños que están convalecientes ya que es nutritivo y fácil de digerir. Es un buen desayuno a pesar de que el tiempo de cocción sea largo y también un buen plato para las penas de amor.

En mi versión, como era para comer al mediodía, le he añadido pollo y champiñones, y el caldo también era de pollo, totalmente casero. Y aunque todo lo he cocinado por separado, existe la versión de cocinarlo todo junto, al menos la última media hora de cocción del arroz. Yo prefería pasar la carne y champiñones por la plancha y darle un toque tostado. A la hora de servir lo he presentado con unas gotas de aceite de sésamo pero también le va bien salsa de soja. Es una receta muy sencilla, lo único es el tiempo de preparación que se alarga mucho, pero realmente vale la pena probarlo.

· CONGEE DE POLLO Y CHAMPIÑONES ·

Ingredientes
  • 180 g arroz redondo de grano corto 
  • 2,5 litros de caldo de pollo o agua
  • 1 pechuga de pollo (cocida) finamente fileteada
  • 8 champiñones pequeños, cortados a rodajas finas
  • Jengibre fresco picado
Aceite de sésamo o salsa de soja, para servir
Cebollino fresco cortado pequeño, para servir

Elaboración
Enjuagar y escurrir el arroz por 3 veces. En una olla llevar a ebullición el arroz con el caldo o agua, remover, bajar el fuego y dejar cocinar durante 1 hora, removiendo cada 15 minutos, tiene que quedar una consistencia de gachas. Vigilar que los granos no se peguen al fondo de la olla.

Mientras con un poco de aceite en una sartén, sofreír el pollo fileteado con los champiñones, terminar con el jengibre rallado.

Para servir, repartir el arroz en 4 cuencos, repartir por encima del arroz el pollo con los champiñones, el cebollino y echar unas gotas de aceite de sésamo por encima.

Nota: la sopa puede espesarse más cuando se vaya enfriando, podemos añadir un poco de caldo de pollo para compensar. Y si no le pones soja, añade un poco de sal al caldo.

Congee is a traditional rice porridge widely used in Asia. It's made by boiling rice in broth or water for a long time, round grain being perhaps the most common, although long grain is also used depending on the country. It's usually served alone, but the savoury version also adds chicken, fish or vegetables, but there's also a sweet version. This dish is often made for elderly people or children who are convalescing because it is nutritional and easy to digest, but also for breakfast and of course also for the sorrows of love ;)

In my version for lunch, I added chicken, mushrooms and chicken broth. I cooked everything separately, but there's also a version where everything is cooked together, at least in the last half hour when the rice is cooked. I preferred to grill the meat and mushrooms and give it a roasted touch. When serving, I added a few drops of sesame oil on top, but soy sauce works well too. It's a very simple recipe, the only thing is the preparation time, which is long, but it's really worth a try.

· CHICKEN AND MUSHROOM CONGEE ·

Ingredients
  • 180g short grain round rice (washed at least 3 times)
  • 2,5 litres chicken stock or water
  • 1 chicken breast (cooked), thinly filleted
  • 8 small mushrooms, thinly sliced
  • Chopped fresh ginger 
Sesame oil or soy sauce, to serve 
Finely chopped fresh chives, to serve

Method
Rinse the rice and drain it for 3 times. Bring the rice and stock to the boil in a saucepan, stir, reduce the heat and simmer for 1 hour, stirring every 15 minutes, it should be a porridge consistency. Make sure the grains don't stick to the bottom of the pot.

In the meantime, fry the chicken fillet with the mushrooms in a pan with a little oil and add the grated ginger.

To serve, divide the rice between 4 bowls, place the chicken with the mushrooms and fresh chives on top of the rice and add a few drops of sesame oil.

Note: The soup may thicken as it cools, you can add some chicken stock to compensate. And if you don't use soy, add a little salt to the broth.
