Chocolate crinkles

Cuando una tirita formaba parte de la cura del dolor y las lágrimas duraban lo que duraba el “sana sanita”. 
Cuando en los cuentos de princesas, los príncipes salían del beso a una rana. 
Cuando la leche te dejaba bigote.
Cuando contabas me quiere, no me quiere, con los pétalos de una flor, y si era sí, sonreías como un tonto y si era no, volvías a repetir para que saliera sí. 
Cuando las mariposas volaban en el estómago cada vez que te enamorabas. 
Cuando la primavera te hacía llorar de alergia y no de alegría. 
Cuando pedías un deseo a una estrella fugaz y te emocionabas por haberla visto y deseabas que se cumpliera aunque luego ya no te acordaras de ello. 
Cuando el chocolate te gustaba, y te sigue gustando, a porciones, a tableta, en taza, en bizcocho, en caramelo o en galleta.

Parece ser que la receta se originó en la primera mitad del siglo XX en la casa de Helen Fredell de St. Paul, Minnesota. En el “Cooky Carnival” de Betty Crocker (que presenta Molasses Crinkles), la Sra. Crocker escribe: “Cuando se sirvieron en Mrs. Fred Fredell's en St. Paul, Minnesota, estaban tan deliciosas que le supliqué la receta. Gracias a ella, miles de personas han disfrutado de estas galletas". 


·CHOCOLATE CRINKLES ·

Ingredientes
  • 60 gramos mantequilla sin sal
  • 230 gramos chocolate semidulce o amargo, picado 
  • 85 gramos azúcar
  • 2 huevos grandes
  • 2 cucharaditas azúcar de vainilla
  • 195 gramos harina
  • 1/4 cucharadita de sal
  • 1/2 cucharadita de levadura en polvo
  • 110 gramos azúcar glass tamizado 

Elaboración
Fundir al baño María el chocolate con la mantequilla. Reservar. En la batidora, batir los huevos y el azúcar hasta que espese, se vuelva una crema blanca y esponjosa de 3 a 5 minutos. Añadir la vainilla, seguidamente el chocolate. Seguir batiendo hasta que se mezcle bien. 

En un cuenco aparte mezclar la harina, la sal y la levadura en polvo. Agregar los ingredientes secos con el chocolate y batir hasta que se mezcle todo bien. Tapar con film y refrigerar hasta que esté firme, desde unas horas hasta toda la noche. 

Precalentar el horno a 165 ºC en la bandeja del horno poner un papel de hornear. Colocar el azúcar glass tamizada en un cuenco profundo. Formar una bola de unos 2.5 cm. y hacer rodar e impregnarse bien dentro del azúcar glass. Tiene que quedar muy pero que muy recubierto. Colocar en la bandeja dejando separación entre ellas. Unos 5 cm. 

Hornear unos 10 minutos, y dejar reposar 5 sobre una rejilla.

It appears that the recipe originated in the first half of the 20th century in the home of Helen Fredell of St. Paul, Minnesota. In the Betty Crocker "Cooky Carnival" (which features Molasses Crinkles), Mrs Crocker writes: "When served at Mrs Fred Fredell's home in St Paul, Minnesota, they were so delicious that I begged for the recipe. Thanks to her, thousands of households have enjoyed these spicy cookies."


·CHOCOLATE CRINKLES ·

Ingredients
  • 60g unsalted butter
  • 230g semi-sweet or dark chocolate, chopped
  • 85g sugar
  • 2 large eggs
  • 2 teaspoons vanilla sugar
  • 195g flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 110g sifted icing sugar

Method
Melt the chocolate with the butter in a water bath. Keep. Beat the eggs and sugar in a food processor for 3 to 5 minutes until a fluffy white cream. Add the vanilla and then the chocolate. Continue beating until everything is well mixed.

In a separate bowl, mix the flour, salt and baking powder. Add the dry ingredients with the chocolate and beat until everything is well mixed. Cover the dough with foil and put it in the fridge until it's firm.

Preheat the oven to 165ºC and place a sheet of baking paper on the baking tray. Put the sifted icing sugar in a deep bowl. Form a ball of about 2.5 cm and roll it well in the icing sugar. It must be very, very well coated. Place them on the baking tray, a little apart from each other. About 5 cm.

Bake them for about 10 minutes and then let them rest on a rack for 5 minutes.

Congee de pollo

Cuando llegaba el frío invierno se metía en capas de ropa, como una cebolla__decía ella, y eso le encantaba, le gustaba sentir el frío aun metida entre esas capas, decía que eso la hacía sentirse viva, con vigor para seguir adelante y notar cada parte de su cuerpo. 

Una vez, cuando su novio rompió con ella y la dejó desolada, sus amigas decidieron viajar a una isla con mucho calor, para divertirse, bailar y beber, beber hasta olvidar. Pero ella no soportaba el calor, tanto calor, decía que la asfixiaba y que hacía que el dolor se quedara dentro, sin poder salir, sin poder quitárselo de encima, el calor la aletargaba, dejaba su interior en pausa y que cuando volviera a la normalidad aún lo llevaría dentro.

Así que se fue de la isla igual que llegó, dolorosa además de quemada por el sol. Juró y perjuró que nunca volvería a quitar penas expuesta al calor. Ella necesita el frío, necesitaba sentirse viva para gritar a los cuatro vientos y en todos los idiomas que sabía, que ella era una guerrera.

El congee son gachas de arroz tradicional muy consumido en Asia. Se obtiene cocinando el arroz durante mucho tiempo en caldo o agua, siendo el grano redondo quizás el más utilizado aunque dependiendo el país también se usa grano largo. Generalmente se sirve solo pero también se le añade pollo, pescado o verduras en la versión salada, pues también existe la versión dulce. Este plato está hecho a menudo para personas mayores o niños que están convalecientes ya que es nutritivo y fácil de digerir. Es un buen desayuno a pesar de que el tiempo de cocción sea largo y también un buen plato para las penas de amor.

En mi versión, como era para comer al mediodía, le he añadido pollo y champiñones, y el caldo también era de pollo, totalmente casero. Y aunque todo lo he cocinado por separado, existe la versión de cocinarlo todo junto, al menos la última media hora de cocción del arroz. Yo prefería pasar la carne y champiñones por la plancha y darle un toque tostado. A la hora de servir lo he presentado con unas gotas de aceite de sésamo pero también le va bien salsa de soja. Es una receta muy sencilla, lo único es el tiempo de preparación que se alarga mucho, pero realmente vale la pena probarlo.

· CONGEE DE POLLO Y CHAMPIÑONES ·

Ingredientes
  • 180 g arroz redondo de grano corto 
  • 2,5 litros de caldo de pollo o agua
  • 1 pechuga de pollo (cocida) finamente fileteada
  • 8 champiñones pequeños, cortados a rodajas finas
  • Jengibre fresco picado
Aceite de sésamo o salsa de soja, para servir
Cebollino fresco cortado pequeño, para servir

Elaboración
Enjuagar y escurrir el arroz por 3 veces. En una olla llevar a ebullición el arroz con el caldo o agua, remover, bajar el fuego y dejar cocinar durante 1 hora, removiendo cada 15 minutos, tiene que quedar una consistencia de gachas. Vigilar que los granos no se peguen al fondo de la olla.

Mientras con un poco de aceite en una sartén, sofreír el pollo fileteado con los champiñones, terminar con el jengibre rallado.

Para servir, repartir el arroz en 4 cuencos, repartir por encima del arroz el pollo con los champiñones, el cebollino y echar unas gotas de aceite de sésamo por encima.

Nota: la sopa puede espesarse más cuando se vaya enfriando, podemos añadir un poco de caldo de pollo para compensar. Y si no le pones soja, añade un poco de sal al caldo.

Congee is a traditional rice porridge widely used in Asia. It's made by boiling rice in broth or water for a long time, round grain being perhaps the most common, although long grain is also used depending on the country. It's usually served alone, but the savoury version also adds chicken, fish or vegetables, but there's also a sweet version. This dish is often made for elderly people or children who are convalescing because it is nutritional and easy to digest, but also for breakfast and of course also for the sorrows of love ;)

In my version for lunch, I added chicken, mushrooms and chicken broth. I cooked everything separately, but there's also a version where everything is cooked together, at least in the last half hour when the rice is cooked. I preferred to grill the meat and mushrooms and give it a roasted touch. When serving, I added a few drops of sesame oil on top, but soy sauce works well too. It's a very simple recipe, the only thing is the preparation time, which is long, but it's really worth a try.

· CHICKEN AND MUSHROOM CONGEE ·

Ingredients
  • 180g short grain round rice (washed at least 3 times)
  • 2,5 litres chicken stock or water
  • 1 chicken breast (cooked), thinly filleted
  • 8 small mushrooms, thinly sliced
  • Chopped fresh ginger 
Sesame oil or soy sauce, to serve 
Finely chopped fresh chives, to serve

Method
Rinse the rice and drain it for 3 times. Bring the rice and stock to the boil in a saucepan, stir, reduce the heat and simmer for 1 hour, stirring every 15 minutes, it should be a porridge consistency. Make sure the grains don't stick to the bottom of the pot.

In the meantime, fry the chicken fillet with the mushrooms in a pan with a little oil and add the grated ginger.

To serve, divide the rice between 4 bowls, place the chicken with the mushrooms and fresh chives on top of the rice and add a few drops of sesame oil.

Note: The soup may thicken as it cools, you can add some chicken stock to compensate. And if you don't use soy, add a little salt to the broth.
