Negra con alma blanca, así es ella, dulce, más dulce que la otra, quedó olvidada, dejando a un lado que forma parte de una historia, en un tiempo de hambre, de dificultad y desasosiego. Ella fue reina en muchas cocinas mallorquinas durante mucho tiempo, las cocineras la usaban en los guisos, y en los fritos, y un buen día allí quedó, y fue sustituida por otra de color más parecido a un atardecer, a un ocaso hasta hace poco, hace poco volvió, y hoy podemos volver a comerla, prepararla y saborearla como si no hubieran pasado los años , disfrutemos del espectáculo.

La zanahoria morada fue antes que la zanahoria naranja, fruto de un "invento" Holandés por ser el mayor productor en el siglo XVI, pero no fue hasta mucho después que llegaron a Mallorca.
Mi madre recuerda comer la zanahoria morada (pastanaga) cuando era niña, después se vendían las de color naranja, menos dulce que la morada. Por esa razón he pensado en usarla en el bizcocho de zanahoria, es una delicia que no debes dejar de probar. ¡ah! el carrot cake suele acompañarse de frosting pero a mi no me entusiasma y siempre termino quitándolo de encima, así que yo sólo lo he decorado con azúcar glas. Si quieres hacerla con harina de trigo sustituye la harina sin gluten y no le pongas goma xantana.

Ingredientes

- 150 ml. aceite
- 200 gramos de azúcar
- 3 huevos a temperatura ambiente
- 1 cda. vinagre de manzana
- 1/2 cdta. canela
- 1/2 cdta. jengibre en polvo
- 1/2 cdta. nuez moscada molida
- 1/2 cdta. bicarbonato
- 300 gr. harina multiuso sin gluten
- 1 cdta. levadura en polvo
- 3/4 cdta. sal
- 150 gr. zanahorias moradas ralladas o picadas (bien exprimidas)
- 90 gr. nueces picadas
Precalentar el horno a 180º C.
Engrasamos el molde o con spray para moldes o con mantequilla y harina. Reservar.
Tamizar en un bol la harina, la levadura, el bicarbonato, la sal, la canela, el jengibre y la nuez moscada. Reservar.
Mezclar el aceite, el azúcar, los huevos y el vinagre. Agregar los ingredientes secos mezclar hasta que no queden grumos. Añadir la zanahoria rallada y las nueces, mezclar con la masa. Verter la mezcla en el molde y hornear 45 minutos o hasta que al pinchar un tester, salga limpio.
Dejar enfriar unos 5 minutos en el molde y desmoldar. Reposar sobre una rejilla de repostería para enfriar.

Ingredients
- 150 ml. oil
- 200 grams of sugar
- 3 eggs, at room temperature
- 1 tbsp. apple cider vinegar
- 1/2 tsp. cinnamon
- 1/2 tsp. ground ginger
- 1/2 tsp. ground nutmeg
- 1/2 tsp. baking soda
- 300 g gluten free multipurpose flour
- 1 tsp. baking powder
- 3/4 tsp. salt
- 150 gr. peeled, shredded, squeezed grated purple carrots
- 90 g chopped walnuts
Preheat the oven to 180º C.
Grease the baking tin either with baking spray or with butter and flour. Set aside.
Sieve the flour, baking powder, baking soda, salt, cinnamon, ginger and nutmeg into a bowl. Set aside.
Mix the oil, sugar, eggs and vinegar. Add the dry ingredients and beat until smooth. Add the grated carrot and walnuts, mix well. Pour the mixture into the baking tin and bake for 45 minutes or until a tester comes out clean.
Leave to cool in the tin for about 5 minutes and turn out. Set aside on a wire rack to cool.
